Enjoying My Off Day, Starting with a Good Meal!

My Sunday is "MY" Sunday because this is usually a day of the week that I have nothing to do or very little to do. I may visit family or go to a Sunday worship service but the rest of my week is usually controlled and scheduled with work, voluntary obligations like community services, and kids activities, so on Sundays I try to be "off off".
I don't know, your Sunday might be a Friday, Saturday, Tuesday, or what ever day a week it is, do yourself a favor and find one. Your body and mind will thank you.
Trust me, I haven't always had my Sundays to myself, because there was a time when I was working two jobs and I was working nonstop, all...week...long. Not to say that cannot happen again, because, I do have things I want to accomplish this year and I may need to save some extra funds. But the ending message is, I have learned to appreciate my Sundays off very much.
My Sunday.
Today, I woke up, prayed, and brief meditation.
I'm blessed,
I'm content,
I'm also very hungry.
Food is good for the mind, body, and soul. I'm not chef, but I can do a lil something with a skillet, lol. I love food, good tasting food and good looking food.
Boudin sausage, eggs, spinach, and diced potatoes.
The star of this meal is the Boudin sausage! #yummy This sausage is French, Cajun, Creole, and native to New Orleans, but I learned about this deliciousness from my sister, who at time purchase it from a street food vendor down in The Big Easy.
Boudin is like ground pork, livers, spices, and rice all stuffed in a sausage. Like a "cajun dirty rice" in the form of a sausage. I know some of you do not eat pork. Good news is, you can also find Boudin in different varieties such as a seafood version, like shrimp Boudin, or crayfish Boudin, Boudin balls, and Boudin stuffed chicken. Yassssss, I want to try them all but unfortunately, I'm allergic to shellfish. Booo hooo, Butta Guru, LOLOL!
On a visit home to Memphis once, my big sis brought some Boudin and she cooked up some for breakfast. We absolutely fell in Love! Since then, I have found it locally at Kroger here in Memphis, and it keeps me content, but I want that real deal authentic, ya know? If you all know of where I can find some real Boudin, please let me know in the comments!

I'm not going to keep you but enjoy your Sunday or whatever/whenever your day off is the best way you see fit. Simply Livin'. Today after meditation, I treated myself to a good meal and with the threat of rain in the air, I may just light the fireplace, curl on the couch, catch up on some reading, and then later who knows.
